At the new Tutto’s Mare, Chef Juca Oliveira has combined his great passion for cooking with his love for the sea. From the Escondidinho de Camaro and the Muqueca de Peixe that are favorites from his childhood in Brazil to the homemade Black Linguini with clams and the Risotto and Prawns that incorporate his training in Classic Italian cuisine.
Miami's many colors and cultures are also honored by the chef in his new creations. The Spanish classic Bacalao con Garbanzos is coupled with Peruvian peppers in a sauvignon blanc sauce while the Baked Corvina Fillet in Japanese miso is prepared in the wood-burning brick oven and accompanied by homemade truffle ravioli. Other favorites include Crispy Ceviche - classic ceviche topped with crispy calamari, and the Local Red Snapper fillet with shrimp and artichokes in a lobster béchamel sauce.
